1) Corn on the cob with butter, salt, and chili powder. In Mexico, they put salt and chili powder on all kinds of stuff, so I decided to try this on corn the other day. Very tasty. Add a lot of chili powder.
2) Gourmet potato skins. I made a baked potato soup that called for just the potato, and no skins, so I saved them, and dressed them up! First, brush the skins with olive oil, and then add your own combination of salt, pepper, and herbs. It's the herbs that really make them taste different than your typical bacon cheddar skins. Then bake them for awhile at high heat, add a fancy cheese, and put them back in until the cheese is melted. We used gouda with mediterranean spices. So good!
